Peanut Butter Cup Cookies

I wanted to bake something easy so I decided to make some cookies..
I super love peanut butter and Reese’s chocolate so I was so excited to see this recipe from Allrecipes.. 🙂
I was also excited to use my new KitchenAid hand mixer!

Ingredients:
1 3/4 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 tsp vanilla extract
2 tbsps milk
40 miniature chocolate covered peanut butter cups, unwrapped

Procedure:

Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.

Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.

Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Oreo Cheesecake Cookies

I came across a cookie recipe in Facebook and I tried it immediately because I like Oreo Cheesecake!

Ingredients:
1 bar (8oz) of cream cheese, equivalent to 8 ounces
1 cup butter at room temperature
2 cups white sugar
2 tsps vanilla
2 cups all purpose flour
1 cup mini chocolate chips
1 1/2 – 2 cups crushed Oreo cookies, approximately 10-15 pieces

Preheat oven to 375 degrees.
Crush the Oreo cookies.
Cream the butter and cream cheese together.
Add the sugar and approximately 1-2 teaspoons of vanilla extract. Gradually add the flour into the mixture then the the chocolate chips. Mix everything together.
Using the measuring spoon (1 tablespoon) or a small ice cream scoop, scoop the cookie dough and form a ball. Roll the cookie dough ball on the crushed Oreo.
Arrange the balls on your greased cookie pan/sheet, about half to one inch apart.
Bake for 12-14 minutes. After baking, do not leave the cookies on the hot cookie sheet for too long, you may transfer your cookies on a cooling rack.

If you are curious, let me show you how to make Oreo Truffles:

Ingredients:
54 pcs Oreo or 1 pack crushed Oreos
8oz Cream Cheese, softened
Chocolate (Depends on your liking)
   250 grams White Chocolate

Procedure:

  1. Crush Oreos in food processor or you can purchase crushed Oreos to make things easier.

  2. Combine crushed oreo with softened cream cheese using your hands in a large bowl

  3. Roll into truffle size balls (1 tbsp). Place on baking tray with parchment paper and chill for 1 hour or put in freezer for 20 mins.

  4. Once ready, melt chocolate and dip oreo balls into chocolate

  5. Design by using crushed oreo, sprinkles, nuts or melted chocolate

  6. Put in 1oz liners. Store in fridge and take out when ready to serve or give as gifts

Valentine’s Day Heart Oreo Truffles
– Instead of rolling the oreo & cram cheese mixture into balls, use a silicon heart chocolate mold.

Pointers/FAQS (Stores indicated are located in Manila, Philippines):
1. I use Beryl’s chocolates

2. Melting Procedure:
Finely chop chocolate block
Microwave for 15 secs
Remove the bowl from microwave & stir
Repeat until fully melted

3. Coating Procedure:
Others use toothpicks but we prefer to use spoon & fork to coat
-Put the oreo ball on top of the fork and dip it in your preferred melted chocolate
-Use spoon to pour some of the melted choco on your oreo ball until fully covered
-Use another fork to remove excess choco
-Gently slide the oreo ball to the baking tray with parchment paper

To be honest, I just tried making Oreo Truffles out of curiosity because they look nice.
I got the recipe from the internet and tweaked it a bit.
I really didn’t expect that it will be a hit and we sold lots of dozens every week.
So I hope you will all give it a try.

Choco Flakes!

Craving for some quick homemade dessert?
Do you like chocolates?
Do you like corn flakes?
If yes, then Choco Flakes will be the best option for you!
No baking required and there’s no need to use your Kitchen Aid mixer (not even a hand mixer!).

Okay to get started, you just need to prepare 2 main ingredients!

1 cup Corn Flakes
200g Milk Chocolate/ White Chocolate
Sprinkles (optional)

For the procedure it is as easy as 1,2,3!
1. Microwave the chocolates in a microwavable bowl:
   Finely chop chocolate block or use chocolate chips
   Microwave for 15 secs
   Remove the bowl from microwave & stir
   Repeat until fully melted
2. Pour the melted chocolates on your corn flakes bowl.
3. Use a tablespoon to scoop the choco flakes mixture and lay it nicely in a baking tray with parchment paper. Use sprinkles to design your Choco Flakes (optional). Let it cool.

Improvised Minion Cake

Lotus Candles are the best!

3 months ago it was the birthday of another godchild of mine (yes, I have a few).
At first I was planning to bake cupcakes like the previous one (pink cupcakes) but a few days before her birthday, my friend told me that her daughter likes minions.

Waaahhhhh..
I didn’t have the materials plus I haven’t even tried making fondant cakes!
Panic mode on but one good thing is that there are ready-made minion cupcake toppers in stores.

My problem then was the main cake itself.
I am still a beginner and I didn’t have the luxury of time to try making a fondant cake.
I had no choice but to use buttercream icing for the minion cake and pray it will work.

The problem is- I don’t have brown, silver and black food colors.
So, I decided to use whatever I have on hand- homemade marshmallow fluff, chocolates & silver cutter.
What an experience, whew!

I know my minion cake was not perfect.
But I guess the most important thing is that my godchild was very happy when she saw her minion cake and cupcakes- Thank God she is only 2 years old. 😉

Finished product. Thank you to the minion toppers I bought and the lotus candle because they made the whole package acceptable.

 

 

 

Christmas Theme Cupcakes

I know it is already February but I just want to share my cupcakes last Christmas.
I only started blogging 2 weeks ago so I was not able to share this during Christmas season.

For the recipe- of course I used the ever reliable Hershey’s Chocolate Cake Recipe.
Frosting I used Chocolate Ganache and I added some marshmallows & sprinkles for the Christmas-y design.
(I always use marshmallows whenever I design cakes or cupcakes coz somehow marshmallows give them a sophisticated look.)

I have a confession to make:
I love designing cakes more on the baking & mixing part.
Sometimes the design will just pop into my head and you’ll feel proud afterwards.
For the preparation, mixing & cleaning up time?
Sometimes it gets too messy, haha!

Baking is such an amazing hobby.
You need hours yes, but the feeling afterwards is priceless.
When people tell you:
Your cakes have nice design- Happy!
Your cakes taste great- Happier!
Can I order a cake for my loved one’s birthday?- Happiest!

If you have an oven, I urge you to try baking..
You won’t regret it- for sure!
